After 20 years of research, I found the perfect Pad Krapow Gai Kai Dow (mai suk). Otherwise known as my #1 go to lunch meal - chicken and basil with a fried egg (runny).
I had passed this shop many times and randomly decided to give it a try.
Oddly enough, the key to great Basil Chicken (for me), is as little basil as possible while still being able to call it Basil Chicken - I don't want a salad, and ordering a Basil Chicken and holding the basil would be like ordering a cheeseburger and holding the cheese.
The level of spiciness needs to add maximum flavor without causing physical pain and the egg needs to have a runny/ sauce-like yolk without giving me salmonella.
