On a recent trip to the local market, I came across some special cuts of cow. As I've said many times in Thailand - just because you can eat something, it doesn't mean you should.
Tripe (I think this is stomach lining)
Omasum (a cow's 3rd stomach)
Tongues
I'll just call these innards.
